Vic's Special Mayonnaise

2 egg yolks
1 teaspoon dry mustard
2 cups vegetable oil (approximate amount)
1 teaspoon salt
red wine vinegar
freshly ground pepper

In a medium bowl blend the egg yolks and the mustard, mix thoroughly. Using a spoon or wire whip add the oil a few drops at a time, beating and stirring vigorously.* Continue dripping in the oil very gradually until it starts to thicken then you can add the oil more generously until it gets to the consistency you are looking for. Use no more than 2 cups oil. If the mixture gets too thick use a dash of vinegar to thin it out. When you get to the desired consistency stir in 1 teaspoon salt and a little freshly ground pepper. Season with the vinegar to the degree of tartness you like. Makes about 2 cups of mayonnaise.

*If you have a stand mixer or hand mixer with a wire whip use it on the lowest setting.
