Winter Fruit Salad

1 20 ounce can pineapple (in juice)
1 package (3 1/8 ounces) vanilla pudding (not instant)
4 cups mixed fresh fruit (bananas, apples, pears, oranges etc)
3/4 cup chopped pecans or walnuts
1/3 cup flaked coconut
Whipped Cream/Cool Whip (optional)

Drain the pineapple saving the liquid. Set pineapple aside. In a large saucepan combine the pineapple juice with the pudding mix. Cook over medium heat, stirring constantly, until thickened. In a large salad bowl combine the pineapple, 4 cups of mixed fruit, nuts and coconut. Add the juice/pudding mixture and blend well. Chill until ready to serve. Top with whipped cream or Cool Whip if desired.
